Short version: When using folder-hook
in mutt, specify the folder like this "Sent" rather than "Sent".

When looking at a list of sent emails, you want a different set of columns compared to when looking at a list of recieved emails. In the first case, the sender is uninteresting - since it is you for all sent mails - and in the latter case, the recipient is uninteresting and trivial (you, or an email-list address).
Mutt offers a folder-hook configurational directive which applies only to folders whose name matches a certain expression. When using this directive, be sure not to include "
" which is often used in mutt to refer to the "current server path".
This for a long period was the problem I had with mutt, and which made it difficult to sort mail I have sent over the years. But today that problem is history.
